Starbucks is going through one of its biggest overhauls ever in 2025, and yes, it’s as wild as it sounds.
The coffee giant is cutting 30% of its food and beverage menu, pushing healthier options, and aligning its future offerings with the Trump administration’s “Make America Healthy Again” (MAHA) push. Starbucks menu changes for 2025 are already sparking buzz, thanks to a high-profile meeting between CEO Brian Niccol and Health Secretary Robert F. Kennedy Jr.
Kennedy shared the bombshell on X, revealing he sat down with Niccol, who confirmed Starbucks plans to “further MAHA its menu.” Kennedy, nephew of President John F. Kennedy, praised Starbucks for already keeping out artificial dyes, high fructose corn syrup, sweeteners, and other questionable additives. He’s been looking into food policy and childhood disease triggers, and while some of his health takes have been controversial, his critique of the FDA’s GRAS (Generally Recognized As Safe) rule has backing across the health world.

Starbucks backed it up too, telling FOX Business, “Our diverse menu empowers customers to make informed nutritional decisions, with transparency on ingredients, calories, and more. Plus, we keep it real, no high fructose corn syrup, artificial dyes, flavors, or artificial trans fats.”
This big shift comes on the heels of a dramatic January announcement when Niccol said Starbucks would slash 30% of its menu to revive sluggish sales. The plan? Focus more on premium, core handcrafted drinks, cut excess, and make operations smoother. Niccol said, “Over the coming months, we will begin to optimize our menu offerings, resulting in roughly a 30% reduction in both beverages and food SKUs by the end of the fiscal year.”
And this menu shift isn’t the only update Starbucks fans need to know. Niccol also confirmed the company plans to double its store footprint in the U.S. by the end of 2025. That’s right, more locations are coming, but with a more curated menu.
One of the most exciting new product tests is a banana-flavored protein cold foam, yep, banana. It has 15 grams of protein and is currently available at five select U.S. locations. It’s paired with a sugar-free vanilla latte, and Niccol is all in, saying, “It’s on trend. It’s delicious.”
Starbucks is also rolling out in-store baking for select pastries, eliminating the reheat method. Freshly baked buttery croissants and chocolate chunk cookies are now part of test runs.
And the drink menu is getting nostalgic. Starbucks is dropping a new 1971 Roast this winter in the U.S. and Canada. It’s a dark roast blend from Sumatra, Colombia, and Brazil, meant to honor the company’s roots.
To celebrate the 30th anniversary of the Frappuccino, the chain is launching the Strato Frappuccino. “Strato” means “layer” in Italian, and the drink adds a fluffy cloud of cold foam on top of your favorite Frappuccino flavors.
Oh, and there’s more. Here are other confirmed Starbucks changes in 2025:
- Self-serve condiment bars are coming back.
- Free refills on hot or iced brewed coffees
- Dine-in customers will get drinks in ceramic mugs.
- Handwritten labels on to-go cups are returning.
- The open-door policy is being reversed.
Since Brian Niccol stepped in as CEO in September 2024, Starbucks stock has jumped 24.5%, a huge rebound for the company. With cleaner ingredients, simplified menus, and new health-driven items, Starbucks is aiming to win back customers while staying trendy and transparent.
